Scott Bridi

Scott Bridi is the founder of Brooklyn Cured, a charcuterie company with a focus on sustainable meat and cross-cultural techniques. Since 2010, Brooklyn Cured has been producing sausages, smoked meats, and cured meats for specialty stores, restaurants, and its farmers market stands. Scott’s past experience includes Gramercy Tavern—where he helped establish its charcuterie program—and the Marlow & Daughters butcher shop. In 2013, Scott’s charcuterie skills were exported to Paris to help open a new restaurant: Frenchie To Go with Chef Gregory Marchand.

Scott has also been a chef-instructor at the Institute of Culinary Education, where he shared his love of food and cooking with students new to the industry. In his off time, Scott fields recipe suggestions from his little cousins and plays fantasy baseball and football—at a mediocre level, at best.
