The Jews of Italy, Spain, North Africa and the Middle East have a rich culinary heritage that goes back thousands of years, with Passover traditions entirely distinct from those of Eastern Europe. The dishes are full of Mediterranean flavors, of spring vegetables, of vibrant herbs. The rules of what is and is not allowed reflect the climate’s sunny disposition.

In this hands-on class, the participants will explore the Jewish Italian tradition with an antipasto of concia di zucchini (marinated with fresh basil) and a main course of agnello a buglione (braised lamb). The Sephardic diaspora is reflected in a Greek haroset, a Tunisian artichoke tajine, a Syrian rice pilaf with fava beans, and a Turkish pistachio cake.

And, as no Passover meal is complete without wine, we will discuss and taste kosher wines made in both traditional and modern styles as we learn the basics of pairing wine with food.
